Turkey Bacon Wrap with Jalapeno-Pomegranate Jelly

So instead of resolutions I decided to start 2017 with recipes. It just seemed more me, and I am 1,000 times more likely to stick to new recipes than resolutions. This may not make any sense to all you resolutioners out there so let me explain:

Every year I will tell myself I have these resolutions and then do absolutely nothing to keep them. I don’t go to the gym, I don’t wake up earlier, I don’t do yoga every morning….you get it. So this year I decided that I would cook more. Now, I already cook quite often. I love to cook, it keeps me sane. However, I kind of gave up this last year on cooking things that are very good for us. I realized this in December when I was sick three times. I’m pretty sure that was my body screaming for more vegetables.

My usual recipe-searching routine would look something like this: Get on the internet, find a recipe that included pasta, bacon, and cheese, and then make it. I’m being serious, that was it. For some reason this year those are the three things that are almost always in our fridge. Now don’t get me wrong, these things will be staying for the most part. I love pasta, bacon, and cheese and so does Chase. My goal is to just love them a little less, and throw some spinach in there too.

Well now it sounds like I do have another boring resolution. Oh well. As long as I can trick myself that this isn’t a resolution I will be good to go.

I kicked off this new year with a new favorite lunch, and damn straight does it have bacon in it. BUT it has spinach too so this is a step in the right direction for me. I have been addicted to turkey wraps. Which sounds very boring but don’t forget, it has bacon in it. Bacon makes everything better. And the real kicker: jalapeno pomegranate jelly.

This recipe has been one of my favorites because you can take it on the go. Being someone who is a substitute teacher and doesn’t always get a lunch break, this is gold. If I can hold my lunch in one hand and chase a kindergartener around at the same time then I am definitely winning that day. The spinach and turkey keep you full and a little cream cheese makes it taste like you’re enjoying something much more decadent than you really are. Writing about it makes me want one now….I may have to have one for breakfast.

The jelly is really what pulls everything together. I understand that not everyone has jalapeno pomegranate jelly lying around. I am lucky enough to have an aunt that makes it every year and passes it out to the family. A cranberry jelly or spread would be an excellent substitute. I have even seen recipes for cranberry salsa around the internet that I bet would be amazing. I have a friend that just uses strawberry jelly, you really can use whatever you have-just don’t skip it all together! Recipe:

  • Sliced turkey
  • 1/3 fat cream cheese
  • Jelly spread
  • Spinach
  • 1 slice bacon, cooked and chopped
  • 1 whole wheat tortilla

Directions:

Fry your piece of bacon. If you are going  to have this lunch again (you will want to) then fry up a couple pieces and store the extra in the fridge. Lay out your tortilla and spread a thin layer of cream cheese. Then spread an even thinner layer of jelly-the less the better. Pile on spinach to your liking and then put the turkey over that. Sprinkle in your bacon.

Fold in the ends of your wrap and then roll it like a burrito! If I have the time I will then roll my wrap in plastic wrap and let it sit in the fridge about 15 minutes. Then I cut it into pin wheels simply because they are pretty. Also, I enjoy mine with half a sliced apple and a handful of potato chips. Because chips are life and I can never turn them down.
